Autoimmune Diet:  Baking With Coconut Flour & Almond Flour

One of the foods that the Autoimmune Diet patients have to eliminate is grains (even gluten free grains).  This is always a source of frustration for patients, especially giving up breads, baked goods and treats.

Autoimmune Diet patients, it’s time to discover coconut flour and almond flour as a resource to use while on the RepairVite protocol and beyond!

Coconut Flour

Low in carbohydrates and high in fiber and protein, coconut flour’s high nutritional value makes it a part of many diets, including low-carb and gluten-free.

Made of ground-up, dried coconut meat, our coconut flour is organic and unsweetened, although the natural sugars in the coconut make the flour mildly sweet. Some consider coconut flour just as tasty as wheat flour, if not tastier, and it has the advantage of being completely gluten-free. Also, coconut flour contains more fiber than any other flour, making it especially filling and a popular choice for those trying to lose weight.

Baked goods made with organic coconut flour are light and soft, with rich textures. Coconut flour can be substituted for up to 20% of the wheat flour in a recipe. Many gluten-free recipes use it as a base, including for coconut flour bread, cakes, and muffins.

Almond Flour

Almond flour is a low-carb, gluten-free baking alternative to standard wheat flour. As you might have guessed, this flour is made of almonds (and only almonds), which are first blanched to remove the skin and then ground up to a very fine consistency, similar to that of wheat or cornmeal.

Sometimes known as almond meal, this flour is particularly popular with customers on gluten-free diets, as it serves for almost all of the same uses as wheat flour. Many gluten-free cookbooks feature the flour prominently in their recipes.

Compared to other flours, the flour is especially flavorful, with a nutty taste that works well with many other foods. It produces baked goods that are especially light and moist. It’s also very easy to use, and doesn’t require any sifting or kneading.
