Gluten Free Cinnamon Snack Mix

Gluten-free, dairy-free! Turn up the crunch! Make your own Chex-type mix with gluten-free Chex cereals or Health Valley’s Rice or Corn Crunch Ems.

Ingredients

  • 2 tablespoons Coconut oil, grape seed oil or oil of choice (Melted)
  • 1 teaspoon Sugar
  • 5 cups Rice or corn Chex-type cereal or combination
  • 1 cup Gluten-free, dairy-free pretzels
  • 1/2 cup Dried fruit of choice (pineapple, raisins, cherries, bananas) (Sulfite-free)

Optional

  • 1/2 cup Sunflower seeds (Sulfite-free)
  • 1/2 cup Gluten free, dairy free chocolate chips (Sulfite-free)

Directions

Step 1
In a large microwave-safe bowl, heat oil on high in microwave for 30 seconds.
Step 2
Stir in sugar and cinnamon. Add cereal and pretzels, stirring until evenly coated.
Step 3
Return mixture to the microwave and heat on high for 1 minute.
Step 4
Stir in dried fruit. Add seeds and chocolate chips, if desired.
Step 5
Cool. Store in an airtight bag until used.

Holy Mole Bars: Bite Sized “Lara” Bars

This recipe is based on a retired Lara bar flavor, Cocoa Mole.

Ingredients

  • 1/3 cup Pitted dried Medjool dates
  • 1/3 cup Raw Almonds
  • 1/4 cup Raw Pecans
  • 3 heaped tablespoons Unsweetened Cocoa Powder
  • 1 tablespoon Cinnamon
  • 1 teaspoon Chili Powder
  • 1 pinch Salt

Optional

  • 1 Splash Water

Note

Gluten free, dairy free, soy free and egg free.

Directions

Step 1
In a blender, pulse all of the above until mixture resembles coarse meal.
Step 2
Scrape out mixture into a bowl and give it a rough mix to make sure flavors are combined.
Step 3
Lightly oil a tablespoon measure and your hand.
Step 4
Shape “dough” into balls and pack them into the spoon.
Step 5
Tap the spoon out to loosen the bites.
Step 6
Store in an air-tight container at room temperature or refrigerate for a longer shelf life.

Spicey Pumpkin Seeds

Ingredients

  • 3 cups Raw Pumpkin Seeds
  • 2 tablespoons Coconut Oil
  • 1 tablespoon Chili Powder
  • 1 tablespoon Sea Salt
  • 1 teaspoon Cayenne Pepper

Note

Gluten free, dairy free, soy free, and egg free.

Directions

Step 1
Preheat oven to 350.
Step 2
Toss together all ingredients into a bowl.
Step 3
Spread on baking sheet and bake for 10 minutes.
Step 4
Let cool and store in an airtight container.
